My route to successful Eastern cuisine has its base in a few fabulous books from some truly exceptional and passionate chefs.

My core skills have been learned from more mainstream books and programmes too numerous to mention, but including Marcus Wareing, Gordon Ramsay, The Cooks Book, Masterchef, The French Culinary Institute and many more......

So, in no particular order.....

1. "PRASHAD" - Indian Vegetarian Cooking - Kaushy Patel. www.saltyardbooks.co.uk - This has been a recent addition to my collection and is superb. Every single dish I have made from here has been extremely well received, and the techniques are readily transferable to carnivorous cuisine as well (assuming you actually want to). If you get no other book, I recommend you get this one! http://www.prashad.co.uk/
2. RICK STEIN - I have long since been a great fan of Rick's cuisine (particularly as a big fish and seafood consumer) - and I have really enjoyed his forays out East. I will be purchasing his latest book supporting the recent TV series on finding the greatest curry in India very soon, but well worth also highlighting one I already have - "FAR EASTERN ODYSSEY", from which I have made many fabulous creations! I'm guessing this will be well worth a purchase...Rick Stein's India - Update!! I have now purchased this as you will see in the recipes and it is fantastic.
3. HAIRY BIKERS - Great Curries - Si King and Dave Myers. Another recent addition - if you make nothing else, (and aren't a vegetarian) ensure you have a go at the Chicken Makhani. Their Pakoras are great as well! .Hairy Bikers Curry
4. Untold Internet searches etc - I shall attribute sources each time I post recipes, and a word of congratulations to Saturday Kitchen also - when the greats of Indian cuisine appear on that show it simply serves as an inspiration to get going.

There are of course many others but I think the above will do you well.

One last thing.....write notes in your recipe books! You will frequently find elements you wish to change if you make a dish again, plus ways to do things either in a different order to suit what you are doing, or even just whether it was delicious and you recommend making it again - plus what other dishes you served with it.
It also helps to note changes to ingredients to suit different audiences (such as young children!)

Doing this makes these valuable tomes fabulous to pass on to your kids when they leave home as well (assuming you can part with them!)
